Kale and Fruit Salad

To be honest, kale has never been one of my favorite vegetables. I don’t know why. I guess there were always other vegetables that were easier to prepare for me and (I thought) tasted better. But, because I know it has amazing health benefits I have been trying to find ways to make it taste delicious. This recipe so far has been the best!

This recipe makes about four servings, but that depends on how much you want on your plate. There is no cooking involved for this recipe.

Time to prepare: About 30 minutes.

I urge you to play around with this. You can add items in more or less quantities from what I write here. This is just what I used and it was amazing.


6-8 kale leaves.

Juice from 1/2 a lemon.

1 apple.

1 orange.

6-8 strawberries.

1 handful of raisins.

1 handful of mixed nuts. I used a mixture of cashews and walnuts.

1 tablespoon apple cider vinegar.

1 tablespoon olive oil.

To prepare:

Wash all the fruits and vegetables.

With your hands, tear off small portions of the kale from the stem and place in a bowl. Then, rub the kale pieces vigorously between your hands and fingers to release some of the juices and thin them out a little bit. You can even squeeze them together. The idea is to make them more tender because kale can be quite thick and rough. When you have “distressed” it enough you can feel the difference. The kale will be easier to bend, thinner, and a more intense green.

Squeeze the juice of 1/2 a lemon and add to the bowel with kale.

Cut the apple, orange, and strawberries into cubes then add to the bowel as well. You can now add the nuts, raisins, olive oil, and apple cider vinegar.

This can be served right away or placed in the fridge and saved for later. Enjoy!
